Abstrak | : | Arrowroot (Marantha arundinaceae L.) is a food which is very beneficial to the health mainly of diabetics to protect the body from the effects of bacterial infection. This research aims to knew antibaterial activity against Escherichia coli and Staphylococcus aureus as diarrhea, the compounds present identify in the extracts, and test of activity in stimulating the growth of lactic acid bacteria.. Arrowroot tubers flour extracted by solvent water and ethanol 40% using the method of maceration, extract was thicken with the rotary evaporator and testing of phytochemicals to compounds of alkaloids, flavonoids, tannins, saponins, steroid and triterpenoid, testing-against oligosakarida using Hight Performan Liquid Chromatography. Testing of antibacterial activity of flour and starch 5%, 10%, 15%, 20% against E. coli and S. aureus using the Kirby-Bauer test.. An analysis of the LAB growth is done through pour plate techniques.. Results of the study revealed that starch and flour have antibacterial potency. The concentrations of starch and flour does not differ statistically against E. coli and S. aureus. The active compounds contained in arrowroot tuber starch and flour is saponin, Stachyosa, Rafinosa, Lactose, Fructose, Galactose, and glucose, which can stimulate of LAB, with R2. (F) = 0.965, R2 (S) = 0,969.
